Sunshine Muffins

Wet ingredients:
1 orange
½ cup orange
juice
1 egg
¼ cup butter or
coconut oil
Dry ingredients:
1 ¼ cups flour
(we used rice and almond flour)
¼ cup tapioca or
arrowroot starch
¾ cup sugar
1 tsp baking
powder
1 tsp baking
soda
1 tsp salt
Optional:
½ C. raisins
½ C. chopped
nuts
Preheat oven to 375 degrees; grease 16 muffin
tins, or line in paper cups.
Melt butter or coconut oil in a saucepan over
medium-low heat.
Stir dry ingredients together in a bowl.
Wash orange well and cut up into eight pieces
(leave the skin on). Put wet ingredients
in a blender; blend until smooth. Add
dry ingredients; blend. Add raisins and
nuts and blend until just mixed. Pour
mixture into 16 muffin tins and bake 15 – 20 minutes.

For
Easter, we can decorate these like cupcakes – ice them, dip the icing in
coconut, arrange jelly beans on top to look like eggs, and poke in a pipe
cleaner like a handle on an Easter basket.
